If you are like me, and you like baking as a way to relax, then you might like this recipe.
Yes, I bake to relax. When I’m fed up with people, I bake. When I had a rough day, I bake. When I want to throw things at the wall, I bake. My friends all know this and one of them asked me if I wanted to bake a whole bunch of different cupcakes for the dessert at their wedding. Of course I said yes!
This also meant that I had to do some research. I wanted to find the recipe for the perfect cupcake. I made batch after batch, had everyone at work try them and eventually I found this recipe.
It’s very basic but you can add pretty much anything to it and it will work. I made these with chocolate, cream cheese and raspberries, speculoos (a bit like gingerbread but the Dutch/Belgian version) and lemon and they were amazing every single time.
What you will need is:
- 250 gr unsalted butter
- 250 gr normal white sugar
- 250 gr self raising flower
- 4 tablespoons of milk
- 4 eggs
- 2 teaspoons of vanilla extract (don’t worry if you don’t have this, it’s just a bit of extra flavour)
Preheat your oven to 170°C or 340°F
Combine your butter and sugar. It helps if the butter is on room temperature, otherwise you can put it in the microwave for half a minute or so until it’s soft, then it’s a lot easier to work with.
Mix the butter and sugar until it’s creamy.
Add your eggs one by one and mix after every egg, that way it’s easier to control.
Add the flower, little bits at a time. The reason is the same as with the eggs. If you throw all your flower in there at once it will end up all over the place.
Mix in all the flower until the mixture is nice and even.
Mix in the milk and vanilla. The milk will make the cupcakes soft and airy.
Fill the cupcakes paper thingies (what do you call those?) 2/3 of the way. That leaves enough room for the batter to grow as it’s baking.
Put everything in the over for 20 – 25 minutes.
